Pecan Crusted Pork Chops

4 boneless pork chops

1 cup pecans

1 tbsp fresh parsley, chopped

2 cloves garlic minced

½ tsp salt

½ tsp pepper

2 tbsp butter

1 sprig of fresh rosemary

Preheat oven to 400 degrees. Crush pecans with a rolling pin, or be like me and use a wine bottle, on a large cutting board. Chop your parsley and garlic and mix into the crushed pecans. Add the salt and pepper. Use your fingers to mix and toss thoroughly. Press all sides of pork chops into pecan mixture. Melt 2 tbsp butter in a pan and let brown over medium-high heat. Add your rosemary to the butter. Turn down to low-medium heat. Cook pork chops in the butter for 5 mins per side then pop in the oven to finish cooking for another 5 mins.
