Cheese Tortellini with Sautéed Vegetables

1 pkg fresh cheese tortellini (I like the Buitoni brand)

1 clove garlic, minced or grated

2 tbsp butter

½ yellow onion, diced

1 red bell pepper, thinly sliced

½ cup cherry tomatoes, quartered

1 pkg baby Bella mushrooms, sliced

¾ cup dry white wine

Fresh basil, roughly chopped

Parmesan

Salt & pepper

Cook tortellini pasta in salted water. Meanwhile, melt butter in a large skillet and add onion and garlic. When the onion begins to caramelize, add bell pepper and cherry tomatoes. Season with salt. When the peppers begin to soften, about 3-5 mins, add mushrooms. Season with salt and pepper. Sauté for another 5 mins and then add wine. Let simmer until liquid has reduced by half. Add tortellini into skillet and fold in basil, Parmesan, and salt and pepper to taste.
