Baked Avocado Chicken Tacos

8-10 small flour tortillas 

1 lb ground chicken 

1 package taco seasoning 

½ medium white onion, diced

2 small tomatoes, diced

2 jalapeños, deseeded & diced

1 cup shredded Mexican-style cheese 

2 avocados 

Juice from ½ lime 

Salt & pepper

Cilantro, for serving

Hot sauce, for serving 

Preheat the oven to 350 degrees. In a large skillet, heat 1 tbsp olive oil over medium heat. Add onion, tomatoes, and jalapeños with a pinch of salt and pepper. Sauté until the vegetables are bright and tender then set aside in a small bowl. Add chicken, seasoning packet, and splash of water to the pan. Use your spatula to break the chicken into small pieces. While the chicken cooks, smash avocados with a fork in a small bowl. Add lime juice, ½ tsp salt, and ¼ tsp pepper. Stir to combine. When the chicken is finished cooking, turn the heat to low. Add the vegetables back to the pan and stir in the cheese. Set out a lined baking sheet and the tortillas. Warm in the preheated oven for about 10 mins. To each tortilla, spread avocado over half and then top with chicken. Fold and use toothpicks to keep closed. When all your tacos are made, place in the oven for 15 mins. Serve with hot sauce, extra lime juice, and cilantro.
