Tempura Fried Okra

2 cups of okra (or more if you’d like)

1.5 cups of all-purpose flour

2 cups of club soda

Flaky sea salt

Olive oil

Heat about 4 tbsp of olive oil in a skillet. When hot (test with a drip of batter and make sure it sizzles), use tongs to dunk okra into batter and place into oil. Cook 3 mins per side – you will need 3 turns to get all of the batter because of the round shape. Work in batches to avoid overcrowding. Replenish and reheat oil between batches. Place onto a cooling rack or paper towel lined plate when finished  and immediately season with flaky salt. 

I like to add an extra pinch of salt when plating!
