Panzanella

~2 cups bread, cubed

1 large tomato, diced in large pieces 

½ red onion, thinly sliced 

½ English cucumber, diced 

¼ cup basil, thinly sliced 

Vinaigrette:

1 tbsp balsamic vinegar 

⅓ cup extra virgin olive oil

Toss bread in olive oil and toast at 350 degrees for 10-15 mins, until crispy. (Best thing about this is you can use ANY bread! I used 2 brioche hamburger buns)! Combine the toasted bread, tomato, onion, cucumber, basil in a large bowl. 

Make vinaigrette:

Add balsamic vinegar to a small bowl and quickly whisk for 30 seconds. Begin slowly drizzling olive oil into bowl while continuously whisking. The vinaigrette will thicken and be smooth and creamy. 

Add vinaigrette to bowl and toss to thoroughly combine. Season with salt & pepper. Cover and refrigerate for 1 hour.
