Sesame Chicken Dumplings in Zesty Broth

3 tbsp sesame oil

4 tbsp fresh ginger, minced

3 cloves of garlic, minced

2 green onions, thinly sliced

1 vidalia onion, thinly sliced

4 cups chicken bone broth

Juice from 1 lime

1.5 tbsp soy sauce

2 tsp hot chili oil

1 lb ground chicken

3 tbsp fresh ginger, minced

2 green onions, thinly sliced

1.5 tbsp sesame oil

1.5 tbsp soy sauce

1 tsp white pepper

35-40 wonton/dumpling wrappers

To serve: cilantro, bean sprouts

First, make the broth by heating sesame oil in a 4-quart (or larger) pot. Add the ginger, garlic, green onion, and onion. Sauté for about 3 minutes, until bright and fragrant. Pour in the chicken bone broth, lime juice, soy sauce, and hot chili oil. Turn heat down to the lowest setting, softly simmering while covered for 30 minutes-1 hour. You can let it simmer for less time, but the longer it has to simmer and infuse the broth, the more flavor it will have!

Meanwhile, combine the ground chicken, ginger, green onions, sesame oil, soy sauce, and white pepper. Working 5-8 at time, lay out the wonton wrappers. Fill each with roughly 1.5-2 tsp of chicken mixture, fold (making a triangle shape) and gently seal closed with just a touch of water on your finger tip. I made about 35 dumplings. Gently place dumplings into the broth and let simmer for 10 minutes.

To serve, ladle out dumplings and broth in a wide mouth bowl. Top with cilantro and bean sprouts.
