Melon and Buratta Salad

1/4 cup extra virgin olive oil

Juice from 1/2 a lemon

3 tbsp fresh, minced ginger

1 tbsp honey

Large pinch of salt and pepper

2 grapefruits, peeled and segmented

2 cups diced honeydew

2 cups diced cantaloupe

2 4 oz balls of burrata cheese

Fresh basil to serve

In a medium bowl, whisk together the olive oil, lemon juice, ginger, honey, salt, and pepper. Gently fold in the grapefruit, honeydew, and cantaloupe. To serve, spoon melon onto plates. Place halved burrata balls on salad. Top with fresh basil.
