Three Cheese & Peach Cast Iron Pizza with Rosemary Infused Olive Oil

1 lb fresh pizza dough (I purchased from the Publix bakery)

1/2 cup extra virgin olive oil

3 sprigs of fresh rosemary

4 oz goat cheese

1/2 cup ricotta cheese

1 tbsp hot honey

Salt and cracked pepper to taste

1 cup freshly grated asiago cheese

2 cups sliced fresh peaches

To top: balsamic vinegar, flaky salt (I use Maldon), fresh basil

First, make the infused oil ahead of time. Add rosemary and olive oil to a sauce pan and heat over medium heat, until the oil is just starting to sizzle. Then turn off the heat, cover, and let sit for at least one hour. During this time, place you pizza dough at room temperature and allow to rise. Meanwhile, combine the goat cheese, ricotta, hot honey, salt and pepper. Leave this at room temperature to help with spreading on the dough. Prepare the peaches by cutting into slices.

Preheat the oven to 550 degrees. Drizzle a small amount of olive oil into the cast iron pan. Roll and stretch the dough, shaping to fit inside the pan. Place dough into cast iron pan and then spread the goat cheese mixture over top. Add the grated asiago followed by half of the infused olive oil and then the sliced peaches. Place into the hot oven for 15 minutes.

Once finished, remove pan from oven and let cool. Then transfer to cutting board and top with balsamic vinegar, Maldon salt, fresh basil, and leftover oil.
