Shrimp Quesadillas with Roasted Red Pepper Sauce

ROASTED RED PEPPER SAUCE

1 red bell pepper, sliced lengthwise & deseeded

1 jalapeño, sliced lengthwise & deseeded

1/2 cup sour cream

Juice from 1/2 lime

Pinch salt & pepper

Roast peppers at 450 degrees for 15 mins and broil for 5. Let cool and remove skins. Add to food processor with sour cream, lime juice, salt & pepper and combine.

PICO DE GALLO

1/2 red onion, small diced

1 large plum tomato, small diced

1/4 cup cilantro, roughly chopped

Juice from 1/2 lime

Pinch salt pepper

Combine all ingredients and set aside.

TO MAKE QUESADILLAS:

Sauté 1 Ib shrimp and season with @sietefoods taco seasoning.

Layer tortillas with quesadilla cheese, shrimp, pico de gallo, corn, avocado. Let brown on both sides in a nonstick skillet. Serve with roasted red pepper sauce and extra cilantro.
