Pesto Pasta with Shrimp

1 lb fresh shrimp, peeled and deveined 

2 tbsp butter

Juice of ½ a lemon

1 tsp red pepper flakes

Salt and pepper to taste

1 serving of pesto (see recipe below)


Melt butter over low-medium heat. Add shrimp and season with red pepper flakes, salt, pepper. Cook for about 3 mins, flip, and add lemon juice. Cook just a few more minutes, until shrimp are pink and fully cooked.

Add shrimp to a bowl of cooked pasta and pesto and toss to combine. 

Top with extra Parmesan, basil.

CK Homemade Pesto:

⅓ cup freshly grated Parmesan 

3 cloves garlic, peeled

⅓ cup olive oil

3 tbsp pine nuts

2 cups basil 

2 tbsp water

Big pinch of S&P, to taste


To a high speed blender, add Parmesan, garlic, and olive oil. Blend until fully combined. Then add pine nuts, basil, water, salt, and pepper. Blend until bright green and very smooth.
