Grandmother’s Meatloaf

In loving memory of my wonderful grandmother.

2 lb ground beef (I used grass-fed, organic)

1 green bell pepper, diced

1/2 yellow onion, diced

2 eggs

1 cup oats

3 tbsp ketchup + 1/2 cup ketchup, separated (I used Primal Kitchen brand)

1 tbsp Worcestershire sauce

1 tbsp dijion mustard

1 tbsp chili powder

1/2 tsp salt

1/2 tsp pepper

Preheat the oven to 375 degrees. In a large bowl combine all ingredients except the 1/2 cup of ketchup. Line a standard loaf pan with parchment paper. Add the meatloaf mixture to the pan. Bake in the oven for 45 minutes. Remove from the oven and spread 1/2 cup ketchup over top. Return to the oven for 12 more minutes.

I like to serve with a little extra ketchup on the side :)
