Baby’s Banana Pancakes

1 banana, mashed

1 egg

1/2 cup oat flour (blend oats in a food processor or blender for a few seconds)

1 tablespoon ground flax seed

1/2 tsp cinnamon

1/2 tsp vanilla extract

Combine all ingredients in a medium bowl. Melt coconut oil in a medium pan over medium heat. Scoop roughly 2 tablespoons of batter into pan to make mini pancakes. Cook 3-5 mins per side, until golden brown. Optional: add blueberries or diced strawberry to batter (or dark chocolate chunks for your older kiddos!).

Easily double this recipe, store in the freezer and warm in the morning.
