Easy, Herb Roasted Potatoes

24 oz small “bite sized” potatoes, quartered

2 tbsp extra virgin olive oil

1/3 cup chopped, fresh parsely

2 tbsp chopped, fresh chives

1 tbsp preferred salt ** I used a coarse, herbs de Provence salt **

1/2 tbsp cracked pepper

Preheat the oven to 450 degrees. Line a baking sheet and add small, quartered potatoes. Pour over olive oil, parsley, chives, salt, and pepper. Toss to combine, making sure all potatoes are coated. Roast for 30 minutes.
